Healthy Latkes

Happy Passover! Or happy snacking/breakfast/lunch- a great recipe overall that's also grain free & dairy free.

Ingredients for 3 latkes
-4 cups roughly chopped cauliflower
-2 large eggs
-1/4 cup shredded onion, thoroughly patted dry
-1/2 cup frozen chopped spinach
-1/2 teaspoon sea salt
-1/2 tsp garlic powder
-Coconut oil for frying
-optional toppings= dairy free sour cream + chopped scallions, unsweetened applesauce + cinnamon

Directions
-Preheat oven to 200 degrees Fahrenheit
-Pulse cauliflower in food processor until reduced to consistency of coarse breadcrumbs, working in batches as needed
-In large bowl, mix cauliflower, eggs, garlic powder, sea salt, spinach, and onion
-Pour oil in large skillet over medium heat, and divide out size of latkes. Fry on each side for about 5 minutes, or until the underside has formed a sturdy, golden-brown crust. If you flip too soon, they may fall apart.
-Flip to other side-Repeat two more times
